   ——引言

  2018年5月25日,棠外国际部继4月U-course——“我爱成都”城市生存挑战成功后,又带领学生开启了新技能学习之旅。本次学习的地点位于郫县古城镇上世界上唯一以菜系文化为陈列内容的成都川菜博物馆。经过一个小时的车程,映入眼帘的手工雕刻大门和汉代砖石,让我们感受了历史的厚重;红木嵌黄花梨屏风和清代棉线绣麻蜀绣,加深了我们对传统工匠的敬畏。

  一、总概川菜博物馆

  步入川菜博物馆,不同于一般博物馆充满距离感的文史资讯,馆内以深入浅出的方式,述说川菜的历史渊源、川菜流派、烹调手法、使用器皿等等,同时配以完善的川菜实作体验区、小吃美食,让国际班的学生不仅了解了川菜知识,实践了川菜操作技能,还品味了地道四川小吃。

  二、细致了解川菜历史

  进入典藏馆,古蜀、秦汉、唐宋、明清、民国、现代……数千件文物典籍呈现蜀人千余年的饮食故事;煮食器、盛食器、酒器、用餐器、茶具……3000年前的烹饪器皿让人饮食思源。学生在倾听中,了解了川菜的前世今生,感受了川菜的历史变迁。

  三、玩味川菜原料展示区

  走出典藏馆,来到川菜原料展示区。这里不仅拥有“川菜之魂”——郫县豆瓣的酿制工艺场,还有无公害绿色产品种植园。在倾听讲解员的豆瓣文化中,孩子们带着对豆瓣匠人辛勤劳作的敬佩和对美好事物执着追求的敬重,用心感受用大勺搅拌豆瓣酱的黏稠度,仔细体验了一把三百余年历史的手工“翻晒露”工艺,感悟“一餐一饭,当来之不易”的艰辛。

  四、品尝四川经典小吃

  这是孩子们最喜欢的地盘,各种小吃川北凉粉、石磨豆花、钟水饺、担担面……玲琅满目的摆放在那里,孩子们在追寻美味惊喜时,又体会了与同伴一起分享美食的乐趣,深度体验了“一碗一碟,百口百味”、“五味调和,百味生香”的小吃文化内涵。

  五、玩转川菜演示馆

  如果只用眼睛看、耳朵听、鼻子闻、嘴巴尝,那川菜的核心文化是不能体会的,所以孩子们必须去亲自实践。换上厨师服、戴上厨师帽,孩子们就宛然一个个专业的“厨师达人”。在名厨的指导下,孩子们制作的小吃“熊猫蒸饺”晶莹剔透,熊猫憨态可掬;烹饪的热菜“宫保鸡丁”颠勺喷火,一气呵成色香味俱佳;拼盘的冷盘“夫妻肺片”均匀精致,酣畅淋漓。孩子们自己动手,共同分享的精彩表现赢得了“中国烹饪名师”胡小勇的赞赏和肯定,并荣获了“川菜达人”证书。

  古人云:读万卷书行万里路,而现代社会对人才的要求更是全方位的,所以学习不应只在于书本、仅限于课堂。此次棠外国际部U-course综合素质课程之川菜博物馆研修学习之旅,旨在让孩子们在研学中发现和学习,将课内课外知识相结合,增长见识体会多元文化,同时在了解了我们传统文化和历史变迁中,加深了对中华传统文化的认同感和自豪感,更好的传承中华民族的历史和文化!
